I made up a couple of batches of sausage the other day but not having a stuffer or casings (yet) I decided to test it out I would smoke up a couple of fatties.
Didn't get any of the pics of the sausage making itself so this is better in the fattie section.
One batch was a hot Italian sausage.
I got some peppers and onions (ever been to Applebees? Then you have eaten these peppers and onions) and sauteed them lightly.
Along with the onions and peppers I added some shaved asiago cheese, mozzarella and a little red sauce.
Not a lot of filling, I didn't want to get too distracted from the flavor of the sausage.
The other was a chipotle garlic sausage. I didn't add any ingredients because the flavor of this one was great so I just formed a chub and dusted with some chipotle rub.
No pics of them on the smoker but I was running it at 300 (rain was coming in so I was in a hurry) over oak.

Sliced...
Plated with some egg noodles and a quick blush sauce.
I think the Italian was a little heavy on the fennel but others said it was fine, maybe cause I hate black licorice and had wayyyy too much black sambuca when I was younger.
The chipotle was delicious, I should have added at least one more chipotle pepper to it (rehydrated not in adobo sauce) and I'm thinking some cheddar might be a nice addition but still good enough for now *#*
