Hi Everyone,
This is one of my favorite breakfasts…I hope you enjoy it too!
I started with some homemade sausage out of my second batch, and for comparison purposes a chub of Jimmy Dean.
I fired up the small smoker and am going to smoke these with cherry and pecan this morning.
It is a cold, wet, nasty day. The humidity from the water pan immediately turns to steam out the exhaust of my smoker this morning…but it is a wonderful aroma and not belching white smoke like it looks.
While the fatties smoke, I made some buttermilk biscuits. These are not risen biscuits, but hearty stick to your ribs type of buttermilk biscuits. They are awesome, because they have crusty outsides, moist insides, and are all buttermilk…I love them, and thank my grandmother for passing along this recipe to me. I just wish I had listened more and written down her amazing recipes when she was around.
2 cups of Self Rising Flour
5 Tbsp shortening
Work in the shortening with a fork or a pastry blender.
Add a cup and a few Tbsps of buttermilk in small pockets…work it in gently like a pie crust…don’t stir it and be all crazy, because you want it moist and kind of lumpy. Take a small amount and form biscuits. Roll in more self rising flour and position on a baking stone. Put a pat of butter on top.
Fattie is done. Here they are…Jimmy Dean on the left, and my homemade on the right.
They were awesome…
I diced up about 1 ½ lbs for my gravy.
Added about 4 Tbsp of flour and let that cook for a bit…you want the flour to brown a bit almost like making a roux. I hate flour tasting gravy.
Here are the spices for my gravy…
Added 3 cups of milk and the spices…
Baked the biscuits at 450° for 15-20 minutes (crusty edges and browning).
Make sure to bring the gravy to a boil, as flour doesn’t reach it’s full thickening power until it boils.
Split open the biscuits and cover generously with Sausage Gravy…OH MAN! THAT IS DELICIOUS!!
I couldn’t get enough…Next I had buttermilk biscuits with butter and Berry Jelly!
Cowgirl Cassidy was showing off her new hamburger toy…It lasted about 4 minutes!
